About Kilroy's Irish Sausage

Kilroy’s Irish Sausage is the first “made in Cleveland, Ohio” to provide authentic taste of Ireland.  Irish style sausage (or bangers for some) is very unique in that it has a mild but tasty flavor profile with a light but meaty texture.  It’s mostly a breakfast type sausage but also perfect for lunch and dinner in the form of bangers and mash, Dublin Coddle, grilling, or any other creation (see my recipe section).  The sausages are made with minimal ingredients: pork, water, matzo meal (rusk/breading), and select spices.  They are handmade fresh with no additives, preservatives, or MSG.

The Kilroy Family Story

I was born and raised in Cleveland, Ohio, but my family’s story begins in Ireland.  My father came to America from Newport, County Mayo, in the 1950s.  My mother was born in Cleveland, but her father—my grandfather—had immigrated from Cookstown, County Tyrone, in the 1920s.  My parents married and together they raised my four brothers, two sisters, and me with a strong connection to our Irish roots.

As children, we often traveled back to Mayo and Tyrone where we were immersed in Ireland’s music, food, and culture.  One of the things I looked forward to most on those trips was a good cup of tea, a lively tune, and Irish sausage from the local butchers.  I was fascinated by the variety of flavors—each butcher had their own unique recipe—but all shared that light, meaty texture that defines a true Irish sausage.  In Ireland, everyone has their favorite, and debates over “who makes the best sausage” can be as passionate as arguments about the perfect cup of tea!

During COVID lockdowns in 2019, I was living in Chicago, Illinois. With more time on my hands, I turned to my bucket list.  At the top: learning how to make a proper Irish sausage—so I wouldn’t have to sneak them back from Ireland in my suitcase.  After plenty of trial and error, I discovered the secret to making an authentic sausage that tasted just like the ones I grew up with.

Since then, I moved back home and have been proudly supplying Cleveland-area restaurants and stores.  The response has been overwhelming—rave reviews, growing demand, and a loyal following.
